Reflections 3 => Factors affecting the Growth of Micro- organisms


Many food spoilage is the result of microbial growth.

Not only is the taste, texture and flavour affected, it

is also a potential source of food-borne diseases.


The micro-organisms which are more related to food spoilage

include:


Bacteria, Mould and Yeasts.


Temperature:
Micro-organisms are able to grow within a temperature range.

This temperature range is deteremined by the influence

that temperature has on the cell membrane and enzymes
